The "Champenoise" method mainly consists of the fermentation of still wine to sparkling wine directly in the bottles, as well as in its subsequent maturation together with its residues (or funds) that give more body and flavour. The residue is removed from the beverage later, after maturation process using bottle neck freezers.
Bottle neck freezers helps you to collect all the residue from the wine by freezing a small amount of wine in the neck part of the bottle which can be removed from the bottle in one piece leaving only clean and clear beverage in the bottle.
